One thing I love about Fall is that it's perfect soup/chili eating weather. It's been pretty chilly here at our house the past couple of days so I decided it was time to pull out the crock pot and make some chili. I love being able to just put everything in there in the morning and letting it cook throughout the day, sending the delicious smell all through the house...sooo good! Here is the recipe if you would like to try it!
White bean chicken chili
4 15-oz cans great northern beans, rinsed
2 lbs chicken breasts
2 4 ounce cans green chilies
2 tsp ground cumin
1 tsp oregano
1 1/2 tsp chili powder
1/2 tsp salt
3 cloves minced garlic
1 14 1/2 ounce can reduced sodium chicken broth
1 cup water
drain the beans and place all ingredients into the crock pot.
Mix well and cook covered on low for 10-12 hours or high for 5-6.
We served it over rice with a little bit of cheese and cilantro on top but you can also crush up some tortilla chips, cut up some avocados and add a little sour cream on top! Makes 6-8 servings.
