I had so many people asking for that cookie recipe I posted on instagram a little bit ago that I decided to post it her for you all! My mom usually makes these cookies for St. Patricks day and they usually get devoured! These are probably Jake's favorite cookies! We let Evelyn help us make them and her favorite part, (besides sneaking cookie dough) was making thumbprints in the cookies! Here is the recipe!
Pistachio Thumbprint Cookies
Ingredients:
1 C Butter or margarine, softened
1/3 C Powdered sugar
1 Egg
1 tsp Vanilla extract
1/4 tsp Almond extract
2 C Flour
1 pkg (3.4 oz) instant pistachio pudding mix
1/2 C Semi sweet chocolate chips
2 C Finely chopped pecans
Filling:
2 tbsp Butter or margarine, softened
2 C Powdered sugar
1 tsp Vanilla extract
2-3 tbsp Milk
Glaze:
1/2 C Semi sweet chocolate chips
2 tsp Shortening
Directions:
1. In mixing bowl, cream butter and sugar until smooth
2. Add egg and extracts; mix well
3. Add flour and pudding mix to creamed mixture
4. Stir in chocolate chips
5. Shape into 1" balls and roll in nuts
6. Place 2 in. apart on greased baking sheet
7. Made a thumbprint in center of cookie
8. Bake at 350 for 10-12 minutes
9. Remove to a wire rack to cool
10. For filling, cream butter, powdered sugar, vanilla and milk. *add more powdered sugar it it's to runny
11. Spoon filling into center of cooled cookies
12. For glaze, melt chocolate chips and shortening; drizzle over cookies
13. Let stand until set
Try not to eat all of them at once!
