Peaches, peaches and more peaches!

The end of Summer is a bitter sweet ending. Bitter because we will miss those days swimming in the pool, that hot Summer sun on your skin, living in flip flops, the abundance of freckles on your cheeks, and natural highlights the sun gives you. But the sweet is even better. It means Fall is coming! Fall is probably my favorite season. I love the crisp air it brings, I love the smells, the colors, and you can't forget Fall fashion. I love me some ankle boots, hats, and scarfs. It also means it's time to harvest all the lovely foods you have been growing! We recently have been picking peaches (lots and lots of peaches) from my grandfather's trees in his back yard! We had so many it was a little overwhelming. So I searched for different peach recipes to try! Over the next couple of days I will be posting some of these yummy recipes for you to try! Speaking of peaches, make sure if you are in Utah Valley to head on over to Taco Amigo for their seasonal peach shakes! They are a must! 


First peach recipe: Peach oatmeal muffins

Ingredients:
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1 cup sour cream
  • 1 large egg, beaten
  • 1 cup chopped peaches

Instructions:
  • Preheat oven to 400 degrees F. Line a 12-cup standard muffin tin with paper liners; set aside.
  • To make the cinnamon sugar, combine 1/4 cup of sugar and a tablespoon of cinnamon in a small bowl; set aside.
  • In a large bowl, combine flour, oats, brown sugar, baking powder and salt.
  • In a large glass measuring cup or another bowl, whisk together butter, sour cream and egg. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add peaches and gently toss to combine.
  • Scoop the batter evenly into the muffin tray. Sprinkle with cinnamon sugar. Place into oven and bake for 16-18 minutes, or until a tester inserted in the center comes out clean.
  • Remove from oven and cool on a wire rack.


Super easy and very yummy! Not to mention fairly healthy! Jake and I have a bag full of them just sitting in the pantry for us to grab for lunches, morning breakfast, or if we are just craving something a little sweet!
